Kangaroo Wings
So, what to call similar dish with an Australian accent? Well Kangaroos have just as many wings (and indeed feathers) as Buffalo hence "Kangaroo Wings".
Its mind boggling simple, relatively cheap and trust me, they last only seconds at any gathering.
What you need:
Wings
- 12 chicken wing pieces (one wing makes two pieces, keep the wingtips for stock)
Spice Rub
- 2 teaspoon Raw Sugar
- 1 tablespoon Smoked Paprika
- 2 teaspoon ground Black Pepper
- 2 teaspoon Salt
- 2 teaspoon Garlic Powder
- 2 teaspoon Onion Powder
- 1/2 teaspoon Mustard Powder
- Pinch of Chilli Powder
- 150g mild blue cheese like Tasmanian Heritage Classic Blue
- 1/2 cup (125g) sour cream
- 1/2 cup (125g) mayonnaise
- 2 garlic cloves, crushed
Method:
- Preheat oven to 220 C or 425 F.
- Cut wings into two pieces. Place Wings and Spice Rub into a large bowl and mix with your wings to coat evenly. Spread out evenly on a metal baking tray covered with baking paper. Space out well. Bake for about 20 minutes, turn the wings over, and cook another 20 minutes, or until the wings are cooked through and browned.
- While the Kangaroo Wings are baking, throw all the dip ingredients into a food processor and mix until smooth (add some water if it is a bit thick).
- Serve. You can add carrot and celery sticks which also go well with the dip.
